Ingredients:
• 250 g Eskort French Polony, finely chopped
• 2 spring onions, finely sliced
• 2 tomatoes, finely diced
• ½ red, ½ yellow and ½ green pepper, seeded and finely diced
• 30 ml parsley, roughly chopped
• 30 ml olive oil
• ½ lemon, juiced
• Salt and freshly ground black pepper
• 250 g corn chips
• 200 ml grated cheese
Method:
- Make fresh salsa by combining the spring onion, tomato, peppers, parsley, oil, lemon juice and season.
- Preheat grill to medium.
- Spread the corn chips over a large ovenproof plate.
- Spoon over the chopped polony, followed by the salsa and sprinkle with grated cheese.
- Grill for 1 – 2 minutes until cheese is golden and bubbling.
- Sprinkle with extra chopped parsley and serve.
